Offering Independent Living, Assisted Living, as well as a 40-bed
Skilled Nursing Unit providing Long-term Care and Short-term,
sub-acute rehab services.About the PositionThe Sous Chef
participates in all functions of menu planning, food preparation
and all inside kitchen operations including presentation and
sanitation. Oversees development of all cooks.Essential Duties and
ResponsibilitiesOverall responsibilitiesOversee the preparation of
food per menu, production sheets, recipes, and time schedule to
ensure all menu items are prepared correctly, served on time and
are of the utmost quality Eliminate waste as much as possibleReview
daily menus; makes changes and make adjustments where necessary;
report all changes to Dietary ManagerSupervise cooking staff to
ensure food quality, taste, appearance and temperature while
maintaining high operating standardsPrepare corrective action and
performance reviews for staffInterview and train new staffEnsure
that cooking stations are properly stocked and set up for each
mealDirect cooking staff activities so that food is prepared and
cooked to order in a timely mannerFollow HACCP/City of
Chicago/State of Illinois guidelines to ensure safe food
practicesEnsure proper food temperature are maintained & food is
stored correctly.Ensures that all kitchen employees consistently
adhere to uniform, grooming and apperence standardsConduct regular
inspections of the entire kitchen/dishwashing arreas and coolers
and promptly act to correct deficiencies found during the
inspections, and report them to the Executive Chef.Assist with
kitchen inventory and preparing order list for Chef de Partie /
KitchenManagerAdhere to monthly budgetsComplete meal rounds in the
dining room to assure customer satisfactionDirect all cooks to
maintain the kitchen, its equipment, tables, counters, carts, in
safe and sanitary conditionCreate an atmosphere of warmth, personal
interest and positive emphasis as well as a calm environment
throughout the departmentBe able to perform functions contained in
Lead Cook, Cook, and Utility Worker job decriptions
